Famous gozleme recipe
Gözleme is a very famous traditional Turkish speciality, and is made of hand-rolled dough that is lightly brushed with butter and eggs, filled with various toppings such as cheese, spinach, meat and patoteos, than sealed, and cooked over a grill plate for couple of minutes.
Gozleme name comes from the Turkish word göz meaning “compartment”, in reference to the pocket of dough in which the various toppings are sealed and cooked.
Traditionally, this is done over a saç in Turkich and plate grill in English.
There are few Toppings for gözleme and they vary by region and of course your personal preference, some of them are
- Gozleme with variety of meats (beef, chopped lamb, sucuk,),
- Gozleme with vegetables (spinach, , eggplant, garlic
- Gozleme with potatoes
- Gozleme with cheese
- as well as Gozleme with eggs and spinach
Ingredients needed for Gozleme with cheese
Dough:
- 2.5 cups of flour
- Some extra flour is needed for dusting
- 3/4 teaspoon of salt
- 1 cup warm water
- 1/2 teaspoon yeast
- 1/3 cup oil
- Some extra oil is needed during the cooking.
Cheese Filling:
- 2 cups feta cheese or other cheese like cheddar or mozzarella.
- Ssome chopped parsley
- Some chopped spinach
- Some chopped onion
- Some garlic (optional)
- Salt and pepper to taste

Step 1 Dough preparation
Put warm water, yeast, salt in a jug. Start mixing with a fork for a few minutes. Cover. Put in a warm place for about 5 minutes until bubbles are gone form the surface.
- Step 2
Put the flour into a large bowl. Add the yeast and 2 tablespoons oil. Mix until it forms a soft dough. Put some flour in a surface before turning the dough onto. Knead for at least 3 minutes or until it gets very elastic. Place on oiled baking tray. Place it in a warm place for around 20 minutes or until the dough gets doubles the initial size.
- Step 3
Roll dough into a 35cm x 45cm rectangle. Place the cheese filling prepared over half of the rectangle. Fold dough over to enclose filling. Press on edges to seal.
- Step 4
Preheat a barbecue plate on medium-high heat. Brush one side of each gozleme with oil. Cook for 2 to 3 minutes. Brush the uncooked side with oil. Turn the side and cook for 3 to 4 minutes until it gets crispy. Remove to a serving plate. Cut gozleme into several pieces..
